The hotel occupies a former 17th-century mill. From the 19th century, the site housed the Glacières de Strasbourg, known as “Klareiswerke zur Dünzenmühle”. Blocks of ice were produced here for merchants, brewers and private households across the region. With the rise of domestic refrigeration, production gradually declined and finally stopped in 1989.
